Mornings are quiet and slow. Nights get loud. The kitchen keeps the same rule at both ends of the day: fewer dishes, cooked closer to the fire.

We buy from the market three streets over, cure what keeps in the basement and cook the rest within sight of the room. City food, cooked hard and fast, with no airs about it.
